Sage is a small perennial herb native to the Mediterranean with greyish green leaves.
It has a strong, astringent, sweet savoury and peppery flavour and a fresh aroma. Commonly used in Italian cooking, it is an essential herb for pork and poultry stuffing. Good with cheese dishes, eggplant, veal, sausages, soups, stews, turkey and boiled or roasted vegetables.
Sage is anti-inflammatory, antibacterial, antispasmodic, antiseptic, anti-aging, sedative, cooling, disinfectant and a circulatory stimulant.
Common medicinal uses include: strengthens the heart, fights infections, prevents premature ageing, fights free radicals, soothes the digestive tract, eases menstrual irregularities.
